BANANA CAKE

Easy banana cake recipe for anyone to follow...........even my 3 year old daughter can make this. So you can imagine how easy it is.


Ingredients-

Eggs 2 nos
Sugar 1 cup
Oil 1 cup
Refined flour 1 cup
Bananas 3-4, mashed
Baking powder 1/2 tsp

Method-

*Grease the cake tin with oil and dust with flour.

*Pre-heat the oven to 150 C.

*Cream the eggs and sugar with the help of a hand blender or a whisk, until light and fluffy.

*Add the oil and mix well.

*Add the mashed bananas.

*Add the baking powder to the flour and sift it.

*Add the flour into the egg mixture and fold well with a spatula.

*Pour the cake mixture into the cake tin and put in the oven for baking.

*Bake for about 30-40 mins, till a toothpick put in the center of the cake comes out clean.

*Let it cool in the cake tin for 15 mins and then de-mould.

FRESH MANGO CAKE

I've used mangoes for this cake but you could use any seasonal fruits that are available in the season. Apples would also taste very good.

Ingredients-

Eggs - 2 nos
Sugar - 3/4 cup
Butter - 1/2 cup
Milk - 1/2 cup
Flour - 1 cup
Baking powder - 2 1/2 tsp
Mangoes - 2 nos

Method-

* Mix the eggs and sugar till light and fluffy (it should hold the shape of eight written on it with a whisk)
* Melt the butter and milk together in a pan on slow fire.
* Mix the butter mixture with the egg mixture well,
* Fold int he flour and the baking powder.
* Grease and line a cake tin with butter paper.
* Pour the batter the cake mixture into the tin.
* Arrange the sliced mangoes on top and and sprinkle some sugar on top for a crispy sugary crust.
* Put in pre-heated oven for baking.
* Bake at 200 C for 15-20 min and then reduce the temperature to 100 C and bake for another 10 mins or so, till a toothpick put in the cake comes out clean.

FINALLY A POST & 5 MINUTE CHOCOLATE CAKE

HELLO EVERYBODY,

finally I'm back with a bang and I'm just going to give u all a lovely instant chocolate cake recipe. I'm posting this recipe specially for my Year 1 students..............

Ingredients-

4 tbsp cake flour
4 tbsp sugar
2 tbsp cocoa powder
1 egg
3 tbsp milk
3 tbsp oil
1 large coffee mug

Method-

1. mix the first 3 dry ingredients in a mug.
2. add the egg and mix well.
3. add the milk and oil and mix well but not too much.
4. cook in a microwave oven for 4-5 minutes.
5. it will start to rise and flow out of the cup.
6. keep stopping the micro for a few seconds and start again when this happens.
7. goes amazingly well with a scoop of vanilla ice cream.

P.S.

  • What is cake flour???
In a cup add 2 tbsp cornflour and 1/2 tsp baking powder. Then fill the rest of the cup with refined flour.
Sieve this mixture 6-8 times. This is cake flour. Store and use as and when necessary.

BANANA CHOCO-CHIP MUFFIN

Banana and chocolate is the most amazing combination ever made. N to have it early in the morning in the form of a muffin is like having a trip to the heaven the first thing in the morning. So here goes to a grand start to a beautiful day.

Ingrtedients-
4 bananas
1/3 cup melted butter
3/4 cup sugar
1 egg
1 tsp vanilla essence
1 tsp baking soda
1 1/2 cup flour
1/2 cup chocolate chips
1/2 walnuts
Method-
* Mash the bananas properly.
* Cream the butter and the sugar till light and fluffy.
* Add the vanilla essence and the egg and mix well.
* Add the mashed banana and mix well.
* Fold in the flour and the baking soda.
* Add the choco chips and the cashew nuts in to the mixture.
* Pour into paper-lined muffin cups and bake at 180 C for 20 min or till a toothpick inserted comes out clean.

COOKIE TOPPED BROWNIE

This is one of the best brownies ever, that i've tasted. We, me n my colleague Anant, made it in the college bakery. N people freaked out on it. It was a peice of heaven in our hand.

Ingredients-
For brownie layer-
270 gm chocolate
240 gms butter
1 2/3 cup sugar
4 eggs
1/2 tsp salt
1/2 tsp vanilla
1 cup flour
1 cup walnuts
For cookie layer-
1 1/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
120 gms butter
3/4 cup brown sugar
2/3 cup sugar
1 egg
1 egg yolk
1 tsp vanilla essence
1 cup chocolate chips
Method-
* Brownie layer-
* Melt the chocolate and the butter in the bain-marie.
* Beat the sugar and eggs until light and creamy.
* Add the vanilla and the salt.
* Add the chocolate to the batter and mix well.
* Add the flour and the walnuts and mix well.
* Put in a well greased and butter papaer lined baking tray.
For the cookie layer-
* Beat the butter, brown sugar and the sugar until creamy and light in colour.
* Add egg and mix well.
* Then add the yolk and mix well.
* Add vanilla essence and mix well.
* Add flour, baking soda and salt and mix well.
* Add the chocolate chips and form a soft dough.
* Spread the cookie layer on top of the brownie layer and spread evenly.
* Bake in a pre-heated oven at 180 C for 30-35 mins or if pricked by a toothpick it comes out clean.

NO BAKE YOGHURT CHEESE CAKE

Base-

250 Gms crushed biscuits
100 Gms butter


Filling-

260 gms hung yoghurt
130 gms castor sugar

Method-


* Crush the biscuits and mix the melted butter to form a sandy texture.
* Press into the bottom of an 8 or 10 inch pan. Chill until firm.
* In a bowl beat the yoghurt and mix in the sugar till it is creamy.
* Pour into the set base and let it set in the refrigerator overnight.

LONG BREAK

Hi all,
Sorry for such a long break on my blog. I have moved to a new city and taken up a new job. So teething problems happen as you all are aware of. So trying to settle in as fast as possible. But life has not been easy as away from husband is also a big deal and also to take care of my little angel and work and home.
