Noodles pakora

Hey all, i know you all are angry with me for not posting for a last two months. But here i am back with a new recipe for you all.

I made this for my princess's tiffin. Now she has grown up and in a big school. 

Ingredients-

Boiled noodles- 1/2 cup
Red bell peppers, chopped- 3 tbsp
Besan- 5 tbsp
Spring onions, chopped- 5 tbsp
Salt- to taste
Water- as per requirement
Oil- for frying
                                        

Method-
1.Put all the vegetables and the noodles in a bowl and mix well to evenly distribute the ingredients.
2. Add salt and check for seasoning.
3. Add the besan and add little water to make a thick mixture which is just coating the noodles and the vegetables mixture.
4. heat oil in a kadai.
5. Drop little spoonfuls of the noodles and besan mixture into the hot oil.
6. fry till golden brown and crispy.
7. Serve with Ketchup or mint chutney.

Note- You can add any vegetables that you like. I added red bell peppers as my princess does not like any other veggie with red bell pepper. It is just her favorite veggie.

SALAMI PANZANELLA

Yesterday i had a salami panzanella salad for dinner. And it was just delicious. I know that i'm blowin my own ttrumpet but you have to try this to say the same yourself. So over to the recipe now and no more chatter.
Ingredients-

4-5 button mushrooms
1 small cucumber
1 tomato or 5-6 cherry tomatoes
2 soft rolls or a peice of french bread
1 tsp olive oil
3 slices salami

For the mustard dressing-

1 tbsp dijon mustard
1 tsp white wine vinegar
Salt to taste
Pepper to taste
1/4 cup olive oil

Method-

* In a bowl add the mustard, vinegar, salt and pepper and mix well.
* Now add the olive oil in drops and whisk well.
* Keep mixing the oil slowly till all is incorporated. Keep aside.
* Peel and cut the cucumber into desired shape.
* Remove the seeds from the tomato and cut into dices.
* Wash the mushroom and slice thickly.
* Cut the bread into 1 inch dices.
* In a pan heat the olive oil and add the bread cubes.
* Toss till they turn a golden brown and become crispy. Keep aside.
* Cut the salami into dices.
* Put all the veggies, bread and the salami into a bowl.
* Drizzle with the mustard dressing and toss well to coat in the dressing.

* You can also add lettuce to this salad.

ROASTED APPLE AND CORN SOUP WITH ROASTED LEMON

This is a very tasty and flavourful soup. And is very guud for winters as it is very hearty also. It has a hint of basil and the tartness of apples and lemons but it is reduced a bit cause the aooles and the lemons are roasted.

Ingredients-

1 green apple, roasted
1 lemon, roasted
2 potatoes, roasted
1 onion, roasted
7 large basil leaves
Salt to taste
Pepper to taste
1/2 cup milk
1/2 tbsp olive oil

Method-

* Chop the apples with peel and keep aside.
* Peel the potatoes and onions and chop them roughly.
* In a pan heat the olive oil and saute the corn kernels.
* In a blender jar, put the chopped apples, potatoes, onions, basil and corn.
* Blend till smooth and then transfer to a pan.
* Add milk to thin it down and bring to a boil.
* When the desired consistency is reached, then season with salt and pepper.
* Then squeeze out the juice of the roasted lemon and add the tang to the soup.
* Garnish with fresh basil sprig.

SPROUT SALAD WITH TANDOORI CHICKEN AND BOILED EGG


Ingredients-


1/2 cup sprouts, any (i used green moong dal)
1 small head iceberg lettuce
2 tbsp yoghurt
salt to taste
pepper to taste
1 boiled egg
1 piece tandoori chicken
Method-
* Wash the lettuce leaves in ice cold water so that they become crisp.
* In a bowl mix the salt and pepper in the yoghurt.
* Add the sprouts and the lettuce, and mix well with a light hand.
* Arrange on a plate.
* Shred the chicken piece and arrange on the salad.
* Shell the egg and either half or quarter, and arrange on the salad.
* Serve chilled. Enjoy !!!!!!!

GARLIC DRESSED PRAWNS

Ingredients-

1 tbsp garlic, very finely chopped or paste
1/2 tbsp ginger, chopped or paste
1 small fresh red chilli, de-seeded and chopped
1 tbsp fish sauce
1 tbsp sesame oil
3 tbsp groundnut oil
4 tbsp lemon juice
Salt to taste
250 prawns, de-shelled and boiled

Method-

* In a bowl mix all the ingredients except the prawns.
* add the prawns and mix well.
* Let it soak in dressing for 10 min.
* Serve chilled. Enjoy !!!!!!!!!!

BASIC SAVOURY CUPCAKE

Ingredients-

2 cups flour
1 tsp baking powder
1 tsp salt
1 egg
3/4 cup milk
125g butter, melted

Method-

* Mix all the dry ingredients in a bowl.
* Mix all the wet ingredients in another bowl.
* Put the wet ingredients into the dry and mix well.
* Any savoury flavouring can be added.
* Makes about 12 cupcakes or 2 mini cupcakes.

FILLINGS-
1/2 cup goat cheese and 2 tbsp rosemary
1 cup spinach and 1/2 cup sun-dried tomatoes
1 cup spinach and 1/2 cup corn kernels
1 cup brocoli
1 cup cheese and 1/2 cup bacon
1 cup corn and 3/4 cup bacon
1/2 cup ham and 3/4 cup cheese
1 cup chopped pear and 1/3 cup blue cheese
1/2 cup chopped peppers and 2 tbsp garlic
1/2 cup chopped tomato and 2 tbsp garlic
1 1/2 cup scallion
3 tbsp chopped jalapeno and 1/2 cup cheese

PARMESAN AND OLIVE CUPCAKE

1 1/2 cup flour
1/2 cup whole wheat flour
1 tsp baking pwd
1 tsp salt
1/2 tsp baking soda
1/2 cup parmesan cheese
6 tbsp olive oil
1/2 cup and 2 tbsp yoghurt
1/2 cup milk
1 egg
6 tbsp of chopped olives

Method-

* Mix all the dry ingredients in a bowl.
* Mix all the wet ingredients in another bowl.
* Add the wet ingredients to the dry ingredients with a wooden spoon.
* Divide into about 12 muffin baking tin or about 24 mini muffin baking tins.
* Bake at about 200C for about 20 min.
* Serve hot. Enjoy !!!!!!!!

ORIENTAL FISH CEVICHE

Ingredients-
3 tbsp coconut milk
1 tbsp sesame oil
1 tbsp lemon juice
2 tbsp light soya sauce
1 fresh red chilli, chopped, seedless
1 tbsp jaggery, grated
1 onion, sliced and deep fried golden
2 garlic cloves, sliced thin and deep fried golden
150 gms scallops, each sliced into three

Method-

* Mix the first six ingredients well and make the marinade.
* Marinate the scallops in the matinade for 15 min.
* Then arrange the scallops onto a plate.
* Garnish with the onion and garlic and pour the left-over marinade on top.
* Or make a salad with the scallops and use the left-over marinade as a dressing.
* Serve chilled. Enjoy!!

GREEN MOONG SPROUTS AND APPLE SALAD

Ingredients-

1 cup green moong lentil, soaked overnight and then sprouted
1/2 apple
2 tbsp mayo
3 tbsp spring onion, chopped
1 small tomato, seedless, chopped
1 ham slice or 1 chicken breast(grilled or boiled)
Salt to taste
Pepper to taste, freshly crushed
1 tbsp lemon juice
1/2 tsp lemon zest

Method-

* Chop the apple into small dices.
* Mix all the ingredients in a bowl.
* Serve chilled.

ORANGE CRISPIES

Ingredients-

1/2 cup butter
1/2 cup sugar
2 tsp grated orange zest
bread slices

Method-

* Mix the sugar, butter and the zest.
* Spread on both sides of the bread slices.
* Cut the bread in half diagonally or any desired shape.
* Place on greased baking tray and bake at 350 C for 8-10 mins.
* Turn slices over and bake for another 7 mins.
* Serve hot and enjoy!

TANGY SWEET CASHEWNUTS

Ingredients-

1 cup raw cashewnut
1/4 cup sugar
pinch of salt
zest of 1 lemon
1 tsp freshly crushed pepper

Method-

* In a large pan, combine cashewnut and sugar over medium high heat.
* Stir frequently until sugar starts to melt.
* Lower heat, and stir continuously for 10 minutes, or until sugar starts to fully melt and cover nuts.
* Add pepper and continue to cook for an additional minute or two, until nuts are well glazed and pepper is well mixed in.
* Add lemon zest and stir until well mixed.
* Pour onto waxpaper on a cooling rack, and spread out.
* Allow to cool. Store in tightly-sealed container.

OLIVE CHEESE BITES

Ingredients-

1 cup flour
2 tsp baking powder
pinch of salt
1/2 tsp cumin
1/2 tsp chili pwd
1/2 tsp garlic, chopped
2 cups grated cheese
1 egg, beaten
1/2 cup milk
2/3 cup chopped black olives

Method-

* Combine flour, baking powder, salt, cumin, chili powder, garlic, cheese, and olives in a bowl.
* In a small bowl, beat egg and milk together.
* Add to bowl with dry ingredients, and combine well.
* Drop by teaspoonful onto greased baking tray.
* Place in preheated oven, and bake 10-15 minutes, until done.
* Allow to cool on a cooling rack for a few minutes before serving.

SWEET CHILI PEANUTS

1 cup dry roasted unsalted peanuts
1/4 cup sugar
1 tsp chilli flakes
zest of 2 lemon

Method-

* In a large pan, combine peanuts and sugar over medium high heat.
* Stir frequently until sugar starts to melt.
* Lower heat, and stir continuously for 10 minutes, or until sugar starts to fully melt and cover nuts.
* Add chilli and continue to cook for an additional 30 seconds, until nuts are well glazed and chilli is well mixed in.
* Add lime zest and stir until well mixed.
* Pour onto wax paper on a cooling rack or a greased tray and spread out.
* Allow to cool.
* Break into pieces and ENJOY !!!!!!

LEMON CHILI PEANUTS

Ingredients-

1 cup raw peanuts
1 onion, chopped
1 tomato, chopped
2 tbsp coriander, chopped
Salt to taste
Lemon juice to taste

Method-

* Fry the peanuts and drain excess oil.
* Mix the rest of the ingredients.
* Check for seasoning.

VEGGIE ON HORSEBACK

Ingredients-

Bread slices
Cheese, grated(processed or cheddar)
Tomato ketchup

Method-

* Toast the bread slices on both sides till very crisp.
* Top with a small mountain of grated cheese.
* Top with a small dollop of ketchup.
* Garnish with a sprig of coriander.

NOTE- U can also use spicy chilli sauce instead of ketchup. And originally in the snack, made by my mom when i was small , the bread was deep fried and this would make the bread extremely crisp. But toasting hte bread makes it a little more healthier. And stops the guilt pang. But miss mom when i have this.

POTATO PANCAKES

Ingredients-

Eggs- 3
Milk- 125 ml
Olive oil- 2 tbsp
Potato flakes or pwd- 60 gms
Flour- 40 gms
Baking pwd- 1 tsp
Lemon juice- to taste
Spring onion- 2 stalks, only green, chopped
Salt- to taste

Method-

* Mix all the ingredients together and make a smooth batter.
* Any vegetable can also be added, like corn kernels, or chopped mushrooms.
* Or make the pancakes plain and top with any topping like smoked salmon, etc.

FISH CEVICHE

Ingredients-

Fresh raw fish, diced
Oregano, chopped
Lemon juice
Salt
Spring onion, chopped
Fresh red chilies, chopped without seed
Coriander, chopped

Method-

* Mix the fish with salt, lemon juice and the oregano.
* Let it marinate for 20 min.
* Then drain the fish.
* Add the spring onion, coriander and the chillies.
* Mix well.
* Check for seasoning.
* Serve with tortilla chips or with any other chips.

ANAAR SEEKH KEBAB

Ingredients-

Lamb mince-500 gms
Cumin pwd- 2 tsp
Salt- to taste
Pepper- to taste
Garlic, finely chopped-1 tbsp
Bread crumbs- 1/4 cup
Onion, finely chopped- 2 tbsp
Pomegranate syrup- 2 tbsp

Method-

* Mix all the ingredients together.
* Using the palm of your hand, make into a smooth mixture.
* Thread onto skewers and cook in the tandoor.
* Or they can also be formed into cakes and grilled on a griddle.
* For the pomegranate syrup, reduce fresh pomegranate juice till its thick and syrupy.

TUNA TOSTADAS

Ingredients-

Slices of french bread
Tuna flakes
Tomato slices
Mozzarella, grated
Spring onions, chopped
Capers, chopped
Pepper, crushed
Salt

Method-

* Toast the bread on one side.
* Mix the tuna, spring onions, capers, pepper and salt.
* Place the tomato slices on the untoasted side of the bread.
* Place the tuna mixture on top.
* Top with grated cheese.
* Gratinate under a salamander and serve hot.

PEANUT BUTTER AND OLIVE SANDWICHES

Try out this weird sounding combo.It is surely tasty.

Ingredients-

Peanut butter
Olives, black and green, chopped
Bread slices

Method-

* Apply peanut butter on the bread.
* Spread the chopped olives evenly.
* Cover with another slice.
* Trim the sides, cut into small pieces and serve.
