TOMATO N PEPPER RICE

Ingredients-
Oil
Mustard seeds
Onion, chopped
Curry leaves
Tomato, chopped
Tomato puree
Basmati rice
Black pepper, crushed
Salt
Water

Method-

* Heat oil in a pan and crackle mustard seeds.
* Add the curry leaves and onion.
* Saute till translucent. Add the tomato.
* Saute well.
* Then add the tomato puree and mix well.
* Then add the rice and stir well.
* Add salt and pepper and mix well.
* Add the required amount of water and cook till the rice is cooked.
* Serve hot. Can also be served as a side dish instead of other starch.

LEMONGRASS N MUSHROOM PASTA

Ingredients-

Mushroom, sliced
Lemongrass, chopped
Onion, chopped
Garlic, chopped
Pasta- spaghetti or penne or any other
Cream
Salt
Black pepper, crushed
Chilli flakes
Olive oil
Parmesan cheese

Method-

* Heat the oil in a pan,
* Add the garlic and saute.
* Then add the onion and saute well till translucent.
* Then add the Lemon grass and chilli flakes.
* Saute well.
* Add the mushrooms and sweat them.
* Reduce all the liquid.
* Then add the cream and let it thicken.
* Add the pasta and toss well in the sauce.
* Take it off the fire and sprinkle parmesan cheese.
* Serve hot.

FISH CEVICHE

Ingredients-

Fresh raw fish, diced
Oregano, chopped
Lemon juice
Salt
Spring onion, chopped
Fresh red chilies, chopped without seed
Coriander, chopped

Method-

* Mix the fish with salt, lemon juice and the oregano.
* Let it marinate for 20 min.
* Then drain the fish.
* Add the spring onion, coriander and the chillies.
* Mix well.
* Check for seasoning.
* Serve with tortilla chips or with any other chips.

CARAMEL POPCORN

So do you have some popcorn left over from yesterday's movie night which you couldn't finish? Here's something interesting to do with it.

Ingredients-
Sugar
Water
Popcorn, leftover or fresh

Method-

* Make caramel with the sugar and water.
* Then add the popcorn to the caramel.
* Fold it well.
* Transfer it out onto a greased plate.
* Cool and enjoy.
* Can be crumbled and topped on ice cream.

MUSHROOM PEPPER CHICKEN CURRY


Ingredients-
Chicken leg, boneless
Mushrooms, diced
Onion, chopped
Tomato, chopped
Ginger and garlic paste
Black pepper pwd
Bay leaf
Cinnamon
Cardamom
Salt to taste
Chicken stock or water


Method-

* Heat the oil in a kadai.
* Add the bay leaf, cinnamon and cardamom.
* Saute the onion.
* Add the mushroom and saute for about 3-5 min.
* Add the tomatoes and saute for about 3-5 min.
* Add the ginger and garlic paste and saute well for about 5 min.
* Sprinkle salt and pepper and saute well.
* Add the chicken pieces and saute well.
* When the chicken has turned golden in colour, then add chicken stock or water.
* Let the chicken cook properly and serve hot with rice or paratha.

YOGHURT AND GREEN PEAS CHICKEN CURRY

Ingredients-
Chicken
Yoghurt
Garlic paste
Salt
Pepper
Turmeric pwd
Cumin pwd
Red chilli pwd
Oil
Cumin seeds
Bayleaf
Peas

Method-

* Marinate the chicken with the yoghurt, salt, pepper, turmeric, cumin, chilli pwd.
* Heat oil in a pan and Add the bay leaf and cumin seeds.
* Then add the garlic paste and saute.
* Then add the green peas and saute.
* Then add the marinated chicken.
* Cook on a low fire and stir occasionally.
* Check for seasoning.
* When the chicken is cooked, remove and serve hot with rice or roti.

FISH ESCABECHE

Ingredients-

Fish fillets, sliced thin
Lemon juice
Salt
Pepper
Flour
Olive oil
Bellpeppers, red yellow and green, julienned
Onion, sliced
Garlic, chopped
Leeks, julienned
Vinegar
Lemon juice
Bayleaf
Salt
Pepper corns
Sugar

Method-

* Marinate the fish with salt, pepper and lemon juice.
* Season the flour with salt.
* Dredge the fish fillets in the flour.
* Deep fry the fillets in hot oil.
* In a separate pan, heat oil and saute the onion, peppers and leek.
* When the onions are soft, add the vinegar.
* Add the sugar, bay leaf, pepercorns and lemon juice.
* Arrange the fish in a dish evenly.
* Pour the hot vinegar mix on the fish.
* Chill for 24 hrs and serve.

PICKLED CUCUMBERS

Ingredients-

Cucumber- 500 gms
Salt- 3 tbsp
Sugar- 3 tbsp
Vinegar- 1 cup
Cinnamon sticks- 2 nos
Bay leaf- 1 no
Mustard seeds-1 tsp

Method-

* Peel the cucumber and cut into desired shape.
* Mix all the ingredients except cucumbers and add to about 1 ltr water.
* Bring the water mixture to a boil.
* Reduce the flame and add the cucumber.
* Let it cook for about 3-5 min.
* Take it off the fire and let it cool.
* Can be served with sandwiches. Or just with any kebabs.

ANAAR SEEKH KEBAB

Ingredients-

Lamb mince-500 gms
Cumin pwd- 2 tsp
Salt- to taste
Pepper- to taste
Garlic, finely chopped-1 tbsp
Bread crumbs- 1/4 cup
Onion, finely chopped- 2 tbsp
Pomegranate syrup- 2 tbsp

Method-

* Mix all the ingredients together.
* Using the palm of your hand, make into a smooth mixture.
* Thread onto skewers and cook in the tandoor.
* Or they can also be formed into cakes and grilled on a griddle.
* For the pomegranate syrup, reduce fresh pomegranate juice till its thick and syrupy.

TOFU MAYO

Ingredients-

1 cup firm or silken tofu
1 small clove garlic, chopped
1 tsp mustard
2 tsp cider vinegar
½ t salt
¼ cup olive oil

Method-

* Blend all but the tofu in a food processor.
* Mix in the oil slowly a little at a time, until all is incorporated.
* Can be used in place of regular mayo. And tastes d same.
