ASPARAGUS PESTO

Ingredients-

3 cloves garlic
1 1/4 cup fresh asparagus, diced
1/2 cup extra virgin olive oil
1/3 cup Parmesan cheese, grated
1 tbsp lemon juice
1/2 tsp salt

Method-

* In a food processor, pulse garlic until well crushed.
* Add remaining ingredients and process until smooth

What a great idea! I never thought of using asparagus to make pesto. Very interesting.
